Chicken Marbella
Balsamic vinegar, olive oil, Dijon mustard, garlic, oregano, bay leaves, green olives and capers create a spectacular marinade for this chicken. It is then baked until golden.

Herbed Chicken Piccata
Boneless chicken breasts are pounded to a 1/4 inch thickness, coated with bread crumbs, lemon, basil and butter, then sauteed to perfection.

Neno’s Chicken Enchiladas
Creamy but low-fat enchiladas. Top w/lettuce & tomatoes.

Anniversary Chicken
A special occasion dinner or a dinner that makes it feel like a special occasion. Boneless chicken breasts are sauteed in oil, then brushed with teriyaki sauce before they are baked in the oven with a bit of ranch dressing, cheddar cheese, and green onions.

Pretzel Crusted Chicken
Home made chicken tenders are coated in a mixture of crushed pretzels, bacon, cheese, ginger, beer and egg before baking in the oven. Kids love them.

Greek Chicken and Rice Pilaf
Chicken pieces are browned and then simmered under pressure with onion, garlic, rice, brown sugar, oregano and fennel. This is comfort food!!

Chicken Breasts Dijon

This started out as veal, but a client requested chicken, so here it is. Chicken breasts are pounded thin, then stuffed with capers, parsley anchovy paste and bread crumbs. The rolled breasts are sauteed and covered with a sauce of red wine, crushed tomatoes and fresh spinach.

Chicken and Mushrooms in Foil
Boned chicken breasts are covered first with a mixture of sauteed mushrooms, green onions, garlic, thyme and marjoram and finally a ham slice. Each chicken serving is wrapped in foil and baked. (WW)

This Weight Watchers recipe uses smoked turkey breast, light cream cheese, chopped onion, salsa, ripe olives and fat-free cheddar cheese to create a zippy and delicious wrap. (WW)
